If u dont have Yeast then U can use its substitute. For Subsitute u can use Baking soda and lemon juice. You mix in the soda with the dry ingredients, then add the juice with the wet ingredients. When it reacts, it fizzes up, making the dough "rise". I would suggest Marrriage and Family in the Middle Ages by Frances & Joseph Gies. This site http://historymedren.about.com /od/medievalchildren/Medieval_ Children.htm actually uses it as a reference. I've not read it but I'd like to read "Medieval Children" by Nicholas Orme http://www.amazon.com/Medieval -Children-Nicholas-Orme/dp/030 0085419 (some of the other books they recommend may also help you too, though I've only read the Gies book so I can't vouch for any of them. |
