Here are 3 of mine. I think the words pie & cake are used interchangeably where these recipes are concerned. Enjoy! MISSISSIPPI MUD CAKE #1 When the kids were still at home this was one of their favorites. 2 sticks butter pinch of salt 1/2 c. cocoa 1 1/2 c. nuts, chopped 2 c. sugar 1 tsp. vanilla extract 4 eggs, slightly beaten miniature marshmallows chocolate frosting, your choice Melt butter & cocoa together. Remove from heat & stir in sugar & beaten eggs; mix well. Add flour, salt, chopped nuts & vanilla extract; mix well. Spoon batter into a greased 9x13x2” pan & bake at 350 degrees F. for 35 to 45 minutes. Sprinkle marshmallows on top of warm cake; cover with your favorite chocolate frosting. MISSISSIPPI MUD CAKE #2 1 c. butter 1/3 c. cocoa 1 c. nuts, chopped 4 eggs 2 c. sugar 1 1/2 c. flour ICING: 7 oz. marshmallow cream 1/4 c. butter, melted 1/2 c. cocoa 1 lb. powdered sugar 1/2 c. evaporated milk 1 tsp. vanilla Preheat oven to 350 degrees F. Melt butter. Stir in cocoa, nuts, eggs, sugar, flour & baking soda. Bake for 30 minutes in 13x9” pan. While still hot spread on marshmallow cream, butter, melted cocoa, powdered sugar, milk, & vanilla. Ice quickly, dries very fast! MISSISSIPPI MUD PIE 1 3/4 c. flour 1 stick butter 3/4 c. chopped pecans 1 c. powdered sugar 8 oz. cream cheese 12 oz. Cool Whip 1 sm. chocolate instant pudding 1 vanilla instant pudding 3 c. milk chocolate candy bar, shaved Preheat oven to 350 degrees F. 1st Layer: Combine melted butter, flour, & pecans. Spread in 9 x 13 baking dish & bake until brown. Let cool. 2nd Layer: Combine softened cream cheese, powdered sugar, & 1/2 of the Cool Whip. Spread over flour mixture, let chill. 3rd Layer: Combine 2 instant puddings with 3 cups of milk. Pour over 2nd Layer. 4th Layer: Top with remaining Cool Whip. Garnish with shavings of chocolate candy bar. |

Mississippi gets to vote for
President in a primary for the
first time I can remember.
Vote in the Democratic primary
and vote for Bill. Hold your
nose if you have to, but this
is important and the nation
will be looking at us. I like
Obama, I really do, but we're
talking about getting Bill
back. Obama is young, we can
vote for him next time.
Whatever the motivation, the
important thing is to vote.

What is the status of the I heard that Mississippi
ranked 50th in education
compared with the rest of the
US. In addition, I read from a
comment that was posted online
that Mississippi do not know
geography for 50 years. I
wondered why?
Can Mississippi education be
