Joseph Proust (1754-1826), French chemist. Joseph Louis Proust was born in Angers and educated in Paris. He is best known for establishing the chemical law of definite proportions, sometimes called Proust's law, which states that the elements in a compound are all present in a fixed proportion by weight, regardless of how the compound is prepared. Proust included this law in a paper that he published in 1794. However, it was not widely accepted until Jöns Jacob Berzelius, a Swedish chemist, gave Proust credit for the law in 1811. Proust also discovered grape sugar, or what is now called glucose. In 1816 he was elected to the French Academy of Sciences.
