Why would unopened cheese that January 27, 2010 is the
expiration date.
And I ate some of the cheese
in the batch, that didn't have
mold actually on it. Will I be

Before I read your Additional Details I thought maybe you were fooling us and talking about Blue Cheese. In any event, hard cheeses (like Swiss or Cheddar) that get mold can have the mold removed (either wiping with a paper towel dipped in vinegar) or cutting it off (the former being less wasteful ... of the cheese anyway). Softer cheeses that get moldy can have the mold cut away. The only reason I can think that an unopened package of cheese might get mold ahead of its expiry date is due to improper storage. Cheese should be kept in its original wrapper, or, if opened, wrapped in wax paper and then in foil in the refrigerator. If your refrigerator is too warm the cheese could mold, or if there was a tear in the original packaging it could turn. Air and improper temperature are the enemies of cheese. Make sure you keep your cheese well wrapped and in cold storage. |
